Sirloin Tip Roast, Prep: 15 mins / Cook: 2 hours 15 mins / Serves: 4. Ingredients: 2.5 lb sirloin tip roast, 2 tsp kosher salt or 1 tsp table salt, 1½ tbsp vegetable or olive oil, 1 tsp pepper, 2 tsp dried oregano, 2 tsp dried basil, 1½ tsp crushed red pepper flakes (for extra spice use chili pepper flakes), and 3 cloves of garlic (minced).

The most tender COUNTRY FRIED STEAK ever! Salt and pepper cubed steak on both sides. Dip in scrambled egg then in flour. Fry on both sides until browned. Transfer to foil lined baking sheet. When all are browned and on pan, cover top with foil. Rule here is "Low and Slow". Cook on 300 degrees for 2 to 2 1/2 hours. Meat is tender enough for my 11 month old.

Pepper Steak! "It was a delicous and easy recipe" Used olive oil instead of margarine. Old Bay instead of paprika. Poblano pepper instead of green for a slight kick. Also, sauteed onions and peppers BEFORE garlic (it's the rule). Otherwise, a great recipe!

Pork tenderloin is on regular rotation at my house, both for its flavor and its ease. We love to marinate it in sweet and savory teriyaki sauce, or serve it with a big dollop of Spanish-style romesco. But our current favorite is definitely wrapping that pork tenderloin in bacon, because as my neighbor says, pork on pork can never be a bad thing. And I must say I agree.
